INGREDIENTS
2 lbs. Flounder fillets
1 lb. Maryland crabmeat
1 egg, slightly beaten
1/4 cup diced green pepper
2 TBSP milk
1 TBSP mayonnaise
1 tsp dry mustard
Dash hot pepper sauce
2 tsp canola oil or melted butter
Paprika, for garnish
DIRECTIONS
Preheat oven to 400 degrees.
Remove cartilage from crabmeat.
In a medium bowl, add crabmeat, egg, green pepper, milk, mayo, dry mustard and pepper sauce. Mix well.
Wash and dry fish. Cut fish into 8 pieces.
Place 4 fish pieces in a single layer, skin side down, in a foiled lined baking pan.
Spoon crab mixture on each, cover with remaining fish pieces.
Brush top with oil or melted butter.
Sprinkle with paprika.
Bake for 20 min., or until fish flakes with a fork.
Serves 4.
