INGREDIENTS
6 flounder fillets
1-2 TBSP. basil
1 TBSP. minced garlic
1 tsp. minced lemon peel
1/4 cup white wine
Salt and pepper, to taste
2 TBSP. butter
1/2 cup fresh basil leaves
6 TBSP. Asiago cheese
DIRECTIONS
Preheat oven to 350 degrees.
In a small bowl, combine the dry basil, garlic, lemon peel and wine; let soak for 5 minutes.
Arrange the fillets in a baking dish and pour the spice mixture over the fish.
Sprinkle with salt and pepper.
Dot the fillets with butter and top with the fresh basil.
Sprinkle with 4 TBSP. of cheese.
Bake for 15-25 minutes. Do not overcook.
Sprinkle with remaining 2 TBSP. of cheese and serve.
