INGREDIENTS
4 lbs. flounder filets
4 TBSP butter
1 cup onions, chopped
4 TBSP green pepper, chopped
1 cup mushrooms, sliced
4 garlic cloves, crushed
2 lb. tomatoes, chopped
1/2 tsp thyme
Salt & Pepper
DIRECTIONS
In a saucepan, melt butter.
Add onions, green peppers, mushrooms and garlic. Cook until tender.
Add tomatoes and thyme.
Cook for 5 minutes.
Cut 14-inch lengths of heavy duty aluminum foil.
Sprinkle salt and pepper onto flounder filets.
Place one flounder filet on greased center of each piece of aluminum foil.
Spoon equal amounts of sauce over each filet.
Fold edges of foil over center and make a secure double fold.
Fold both ends over in a double fold.
Place on the grill and cook for 30 minutes.
Serves 6.
