INGREDIENTS
2 - 10 oz. packages of frozen broccoli spears, cooked and drained (fresh broccoli spears may be used instead of frozen spears).
8 flounder filets
1 1/4 cups of cream of celery soup
1/4 cup mayonnaise
1 TBSP lemon juice
Lemon wedges
DIRECTIONS
Preheat oven to 350 degrees.
Divide broccoli into portions.
Roll a flounder filet around each portion and secure with a toothpick.
Arrange fillets in a greased, 2 quart shallow baking dish.
Bake fillets for 20 minutes.
Combine soup, mayonnaise and lemon juice, and pour over filets.
Bake for an additional 15 minutes or until fish flakes with a fork.
Garnish with lemon wedges.
Serves 6-8.
