Blackened Tuna Bites

INGREDIENTS
Ingredients:
Tuna Bites:
1 lb piece tuna steak
2 tbsp grapeseed or olive oil
3 tbsp Paul Prudhomme Seafood Magic or blackening seasoning that you enjoy best
Aioli:
½ cup mayonnaise
1 tbsp relish
Few dashes Worcestershire sauce
A squeeze of fresh lemon juice
A dash or two of Cayenne pepper

DIRECTIONS
Directions:
1. Lightly coat your tuna in a bit of oil.
2. Cut the tuna steak into bite sized cubes.
3. Gently press tuna cubes down into the seasoning mixture and coat all sides with it.
4. Place coated tuna pieces on a plate.
5. Heat 1 ½ tbsp of oil in a non-stick griddle or skillet until very hot but not smoking.
6. Place tuna pieces into the pan and cook over high-med heat until each side of the cube is cooked and golden brown/blackened.
7. You need to move quickly so the tuna doesn’t cook all the way through. Total cook time should not exceed 2-3 minutes if you still want your tuna pink inside.
8. If you want it rarer, you need to cook it even less.
9. Remove each tuna piece (based on size) as soon as it is done and plate.
10. Combine all ingredients in a small bowl and mix until smooth and creamy.
11. Eat the tuna alone or with some of the sauce.
